Traditional Lesvos Sweet White Cheese Pie and a nostalgic moment

The thing with diaries is that it's difficult to be consistent. Thoughts come out when they're ready to...you can't force them. There are times when you're just not ready to share and times when self-expression is the means to creativity.
I feel the need to thank and dedicate this post to Maritina, a beautiful friend who gave me the following recipe and from whom I got so much last year in Lesvos, Teti a fellow colleague and blogger whom I admire for the diversity of her interests and the passion with which she presents them and, last but not least, my friends and students in Anafi this year who inspire me in so many ways.

Although what follows is the recipe for the best sweet white cheese pie I have ever eaten, I assure you it reaches perfection only when eaten in Lesvos!

Colour me pink!


Mix and match they say..and then mix and match again..until you get it just right. 

The ingredients of this salad are not the most obvious partners but - trust me - they blend as if they were always meant..
The crunchy poppy seeds with the creamy avocado, the bitter grapefruit with the sweet vinaigrette, the mild cucumber with the intense rocket..

Shake me, awake me

I bought a new hand mixer, or should I say multi-food mixer. It's red, it's beautiful, it's retro and high-tech and it was instant love! 

This was its first assignment:
A simple but intensely luscious drink to awaken senses.
